Grilled Salmon with Mango Salsa

If you remember a few days ago, I introduced that I’m a part of the Meal Maker Challenge with H-E-B and ConAgra Foods. Today, I get to share my first recipe (Check back each Sunday the next 4 weeks for the rest!)  The featured ingredient is SALSA! I decided to use the. H-E-B Smoky Citrus Salsa, and I mixed it in with the chopped mango’s and fresh avocados and limes. It was the perfect blend!

Grilled Salmon with Mango Salsa

A secret tip is to buy frozen mangos. They are pretty big chunks, so I chopped them down to bite size, the same as the avocado slices. I simply mixed them with some lime juice and H-E-B Smoky Citrus Salsa, and it was perfection!  This week at Texas H-E-B stores, you can get a coupon for H-E-B salsas, then you can make this recipe, yippee! If you aren’t in texas, I know you can find something similar.  For the salmon, I have a grill pan that I used in my kitchen that makes it so easy–cook 3 minutes on each side, wahoo for fast!

Ingredients
  • 4 fresh salmon fillets
  • 1 cup frozen mango chunks, cut to small cubes
  • 1 cup fresh avocado, cubed
  • ½ cup HEB citrus salsa
  • 2 fresh limes
  • 2 cups brown rice, cooked
  • 1 tsp. paprika
  • salt and pepper to taste
Instructions
  1. Spray bottom of grill pan with PAM cooking spray
  2. Season salmon with salt, pepper, and lime juice.
  3. Cook Salmon fillets skin side down for 3-4 minutes, flip to the other side for 3 minutes and then peel the skin off.
  4. Prepare mango salsa with frozen mangos, fresh avocados, 1 lime squeezed, and HEB citrus salsa.
  5. Serve over brown, cooked rice and sprinkle with paprika

Creamy Jalapeno Ranch Dip

There is this Tex-Mex restaurant just down the road from me called Chuys that introduced me to this creamy jalapeno ranch dip  10 years ago. Everyone raves about it, says they could swim in it or have it drenched over their heads and they’d be happy. I tend to agree. They serve it with their chips and salsa (but only if you ask). They also serve it as a dressing for their salads.  I came across a recipe at one point, but I changed it around a bit and added the limes.

If you see the word “jalapeno” and want to turn away–DON’T! I do not like jalapeno’s by themselves. I don’t put them on anything, in fact when I was making this, the idea of pickled jalapeno’s made my stomach turn just a bit as a spooned them out of the jar. But I pressed forward because I knew the end result was pure delicious-ness.

This delicious dip is great for chips or as a salad dressing
Ingredients
  • ½ cup mayo
  • 16 oz. sour cream
  • ½ cup buttermilk
  • ½ cup tomatilla salsa
  • 1 small handful cilantro
  • 5 T Ranch dressing mix (or 1.5 packets)
  • ⅓ cups pickled jalapeños
  • 1 squeezed lime juice
Instructions
  1. Combine all ingredients in a bowl
  2. In a large blender or food processor, pulse til smooth
  3. Refrigerate 30 minutes serve with tortilla chips.
  4. This dip can continue to be refrigerated, covered, for about a week. If you want it more runny for a dressing, add more lime juice

The jalapeno’s give a bit of a kick to the ranch, but not too much. I don’t care for too much spice in my food.
