Pineapple Pretzel Salad

If you are looking for something different to add to your holiday table, I’ve got a great little side dish for you today. It’s in the form of a fruit salad, but with cream cheese, vanilla pudding, and butter it’s more like a dessert!

Several years ago, I was at a church pot luck dinner gathering, and found myself spooning a white fluffy mixture onto my plate, unsure of it’s contents. When my tongue met the spoon, I fell in love, but I wasn’t quite sure what was inside! It was a unique mixture of crunchy, salty, sweet. After asking around, I found the person responsible for this creation, and got the recipe immediately for the Pineapple Pretzel Salad. Though I could pick out the pretzel, I could not identify the pineapple at first. Then I heard cream cheese, and vanilla pudding…I’m not using the term “salad” as being healthy for you–per se–but just that it’s a mixture of ingredients tossed together.

Ten Reasons I’m a new Chick-Fil-A Fan

About 5  years ago, there was a school sponsored night at a local Chick-Fil-A. Although the restaurant had been around a while, I hadn’t been much before. I knew I loved their waffle fries, but that’s about it. Our family just doesn’t eat out much. I sat next to a friend who raved over her love for Chick-Fil-A. Internally, I was surprised at her passion for the place. I mean, it’s just chicken. My husband and I have always chatted about what a genius campaign they’ve run with the COWS making signs to “Eat mor chikin.” CLEVER.

In the past year, I’ve found joy in the chicken salad sandwich at Chick-Fil-A, and even ordered it without bread once, and they offered lettuce for me to wrap it in. Nice. It wasn’t until this past week when I had the opportunity to taste test their new salads, have a tour of the facility, and hear about what really sets Chick-Fil-A apart into a “quick serve” restaurant vs. “fast food.”  I shall now tell you Ten reasons I’m a new Chick-Fil-A fan.

Doritos Taco Salad

This Doritos Taco Salad meal may not  be on the top 10 “healthy” list, but it’s hearty, quick, & easy with most ingredients that are kept on hand. My kids cheer when we have it, which always makes me smile.  I also get pretty excited about this meal, reminds me of my childhood where corn was our main vegetable. I pretty much devour this meal when we eat it.

Doritos Taco Salad

Base Ingredients

1 lb. ground beef, cooked

2 cans black beans, drained

2 cups frozen corn kernals

1/2 green bell pepper finely chopped

approx. 1 T. taco seasoning

Mix In

1/2 bag (as desired)  nacho Doritos chips, crushed

1/2 cup shredded cheese


1 avocado, sliced

dollop of sour cream

You can cook the beef/bean ratios as you’d like with more or less meat. This is the ratio I use for my family of 6. After the beef browns, add the black beans, bell pepper, and frozen corn (I prefer frozen, but you can use canned). Cook a few minutes until warm and bell pepper softens. Add taco seasoning to taste.  Mix in the Doritos and cheese. Top with any toppings of your choice.

*I use this taco base (ground beef, black beans, bell pepper, seasoning, and sometimes corn) for a lot of my Mexican dishes: burritos, tacos, quesadillas, etc. Sometimes I’ll substitute it with chicken, and even add kidney beans.  I don’t like onions, and see bell pepper as a great substitute that makes both my hubby and I happy.


Easy Caprese Salad

Some may say that this is a summer salad, but I pledge right here and now to eat this Easy Caprese Salad all. year. long. It has become my new obsession/favorite salad to eat. I don’t think I’d ever heard of it 6 months ago, and I can’t seem to pinpoint exactly where this delectable treat entered my radar, but my sister in law Alayna helped me throw this together in June, and I nearly gobbled up the entire bowl. It really only has 3 main ingredients with 2 oils to mix as the dressing. Seriously, easy.

3 main ingredients: baby tomatoes, mozzerella, basil mixed with 2 liquids as dressing: olive oil & balsamic vinegarette

Easy Caprese Salad Recipe:
-2 packages of cherubs mini tomoatoes (10 oz. container) I cut them in half, but you don’t have to.
-1 package mozzerella roll (I could have used the mozz. balls soaking, but I wanted it as fresh as possible and I figured there was more salt in those) cut to same size as tomato
-head of basil chopped up

1 T olive oil
1 T balsamic vinegarette
toss to taste
