Triple Honeycomb Crunch

It’s the time again! Welcome to the blog hop featuring 10 creative bloggers. This month’s theme is all things HONEYCOMB.  I decided to make a fun little snack mix, and named it Triple Honeycomb Crunch because it has THREE types of honeycomb in the mix. I’ll share modifications for a single and double honeycomb, too.  It’s a delightful little treat perfect for an outing with the family in individual bags, or in a big bowl over a silly movie.

Chicken Parmesan with Vegetable Pasta

It’s week 3 of the Meal Maker Challenge with my local grocery store, H-E-B and ConAgra Foods.. I’m excited to share this recipe with you another Kid Friendly Family Dinner in Under 30 minutes, Chicken Parmesan with Vegetable Pasta!  The veggie pasta is fairly new (to me), and pairs nicely with the chicken!  This recipe is so easy to make, my daughter helped me! Disclosure: I have received compensation for participating in this contest.

Chicken Parmesan with Vegetable Pasta

Chicken Parmesan with Vegetable Pasta

Easy Chicken Parmesan
Ingredients
  • 6 H-E-B Natural Chicken Breast (boneless/skinless)
  • 4 large eggs
  • ⅓ cup Italian flavored breadcrumbs
  • 1 8 oz. package vegetable pasta
  • 1 15 oz. can Hunts tomato sauce
  • 6 slices mozzerella cheese
Instructions
  1. Crack eggs into a shallow bowl, whisk
  2. Dip each chicken breast into the egg mixture
  3. Dip each "egged" chicken breast into the breadcrumb mixture
  4. Spray skillet with PAM cooking spray, and cook each chicken breast on both sides (5-7 min. each) until fully cooked.
  5. Meanwhile, set a pot of water to boil.
  6. Heat up tomato sauce
  7. Cook pasta noodles until al dente (7 min.)
  8. After each chicken breast is fully cooked, place a slice of mozzerella cheese on each and broil for 2-3 minutes til melted
  9. Serve Parmesan chicken with vegetable pasta on the side.
  10. Serves a family of 6 in under 30 minutes.

 

Here is how to make it–make a little line, dip the chicken in the eggs, coat it with the bread mixture, and cook it up!  You can see from the  picture below, that H-E-B makes their own pasta that is infused with 2 servings of veggies–LOVE that! It adds a nice little flavor to the pasta, and kids don’t even realize it’s veggies–woohoo!

Chicken Tortilla Soup

It’s week 2 of the H-E-B Meal Maker Challenge with ConAgra Foods where I’ve been asked to share Kid Friendly Family Meals to make in under 30 minutes. In total, 5 recipes with 5 different ingredients to start with. This week our ingredient to use was Hunt’s Diced Tomato’s, and I thought of a family favorite. This Chicken Tortilla Soup recipe is so quick and easy to make, and the texture with the crunchy tortilla strips is delicious. Chicken, diced tomatoes, and beans make up the base of this meal, which makes it hearty and filling as well.  You can add or take away any ingredients as desired, too. We make many variations of this meal at my home almost weekly, and the kids will often cheer when they hear about it. I love that sound;)

Chicken Tortilla Soup

With chicken, beans, and tomatoes, this meal is hearty and filling.
Ingredients
  • 4 boneless skinless chicken breasts, cubed
  • 1 10 oz. can Hunts diced tomatos
  • 2 cans black (and/or pinto) beans
  • 1 jar green chile
  • 1 cup frozen corn kernals
  • 2 T (or 1 packet) taco seasoning
  • tortilla strips
  • salt and pepper to taste
  • optional garnish: cilantro, avocado, sour cream, salsa, shredded cheese
Instructions
  1. Pull out crock pot and add uncooked chicken, diced tomatoes, beans, green chile, and frozen corn.
  2. Cook on low for 4-5 hours
  3. Sprinkle and stir in taco seasoning
  4. Serve in bowls and garnish with crunchy tortilla strips
  5. Optionally add the other garnishes as desired.

I’ll eat this all year round, but a warm, hearty soup always sounds delicious on a chilly fall night–I long for that chill in the air;)  If you are in Texas, head to H-E-B, there is a coupon this week for the Hunt’s diced tomatoes!

Grilled Salmon with Mango Salsa

If you remember a few days ago, I introduced that I’m a part of the Meal Maker Challenge with H-E-B and ConAgra Foods. Today, I get to share my first recipe (Check back each Sunday the next 4 weeks for the rest!)  The featured ingredient is SALSA! I decided to use the. H-E-B Smoky Citrus Salsa, and I mixed it in with the chopped mango’s and fresh avocados and limes. It was the perfect blend!

Grilled Salmon with Mango Salsa

A secret tip is to buy frozen mangos. They are pretty big chunks, so I chopped them down to bite size, the same as the avocado slices. I simply mixed them with some lime juice and H-E-B Smoky Citrus Salsa, and it was perfection!  This week at Texas H-E-B stores, you can get a coupon for H-E-B salsas, then you can make this recipe, yippee! If you aren’t in texas, I know you can find something similar.  For the salmon, I have a grill pan that I used in my kitchen that makes it so easy–cook 3 minutes on each side, wahoo for fast!

Ingredients
  • 4 fresh salmon fillets
  • 1 cup frozen mango chunks, cut to small cubes
  • 1 cup fresh avocado, cubed
  • ½ cup HEB citrus salsa
  • 2 fresh limes
  • 2 cups brown rice, cooked
  • 1 tsp. paprika
  • salt and pepper to taste
Instructions
  1. Spray bottom of grill pan with PAM cooking spray
  2. Season salmon with salt, pepper, and lime juice.
  3. Cook Salmon fillets skin side down for 3-4 minutes, flip to the other side for 3 minutes and then peel the skin off.
  4. Prepare mango salsa with frozen mangos, fresh avocados, 1 lime squeezed, and HEB citrus salsa.
  5. Serve over brown, cooked rice and sprinkle with paprika

I really don’t cook with fish enough, but I do love Salmon. It is SO fast to cook, I love it!   Then feel free to head on over to the H-E-B Meal Maker Challenge page.  In the meantime, have some Salmon!
