25 Recipes with Leftover Ham

It’s Easter in a few weeks! The traditional Easter meal is a delicious HAM, so I thought I’d share some ideas on what to do with that leftover ham in the days after the big meal. I actually just cooked a ham a few weeks ago, and was amazed at how far the meat stretched for my family of six. Everyone loves it, and it was fun to throw it into a few different recipes.

Parmesan Ham and Swiss Crescent Roll Recipe

Pillsbury Crescent Rolls have been around for ages. I remember eating them fresh out of the oven when I was a kid. They were just served on the side with a meal, but now they are included as part of the meal in so many fabulous recipes.
I made this Parmesan Ham and Swiss Crescent Roll recipe for my family the other day, and they gobbled them down quickly! I’ll admit, I ate quite a few myself! I think this will be added into the regular rotation because it fits my strict criteria: 1) quick 2) easy 3) kids like it

I had my daughter help me slather on some honey mustard to start with. Then added a slice of ham and split the swiss cheese in half, then rolled it up. Sprinkled on some Italian seasoning and parmesan, and done! For my family of 6, I used two packages of crescent rolls (8 in each) for a total of 16 altogether. Ham and Egg Omelet Cups

I’ve got another recipe to share in the H-E-B Meal Maker Challenge with ConAgra Foods. I’d seen a similar recipe from the Our Best Bites cookbook (one of my faves), but I changed up the insides to add some red and green peppers and hash browns. You can make this as simple as just eggs, or however you standardly make an omelet, but they are great to freeze and eat on-the-go as well! I used Egg Beaters egg whites as well. Disclosure: I have received compensation for participating in this contest.

This delicious recipe can be frozen or eaten fresh, and very customizable.
  • 1.5 cups Egg Beaters liquid
  • 16 slices of ham
  • ½ cup red and/or green bell peppers chopped
  • ½ cup frozen hash browns
  • ⅓ cup bacon bits
  • ¼ cup shredded cheese
  • 1 tsp. salt
  1. Preheat oven to 375 degrees
  2. Combine eggs, peppers, hash browns, bacon, salt, and cheese in a bowl
  3. Spray muffin tins with PAM nonstick spray
  4. Place a slice of ham in each spot and push it down
  5. Scoop a ½ cup or so of egg mixture into each ham cup
  6. Cook in oven for 20-25 minutes
  7. *Eat right away, or freeze for a quick breakfast later.
