Rocky Road Fudge Bars

My friend Tamiel introduced me to these Rocky Road Fudge Bars recipe over 4 years ago. We had both just given birth to our 4th child, and we liked to treat ourselves to delicious  lunches, while watching Cake Boss together. She was in the middle of whipping this up when I got there, and my first glance, I wasn’t overly excited because I don’t LOVE marshmallows and I don’t prefer too much chocolate in my treats–too rich for me. Once she finished them and they chilled, I did the most gracious thing I could think of, and offered a nibble (they did start to look pretty appealing). Then I took another bite, then a bigger bite, then had seconds…and thirds. I was in heaven. The dense, texture, deliciousness has become one of my most favorite desserts to make.

I love a good Peanut Butter and Jelly sandwich. It’s a classic, beloved flavor that never steers me wrong. In high school, I made one nearly every time I went to my best friend Natalie’s house–their bread, jam, peanut butter–just tasted like a slice of heaven to me. Now when I see them, her parents still ask if I want to come over for a peanut butter and jelly sandwich.

Fudgy Vanilla Brownie

At first glance, this fudgy vanilla brownie doesn’t look so appetizing in the large pan it’s baked in. It’s actually called a white texas sheet cake, but I decided “cake” just doesn’t do this treat justice. Maybe it’s because I’m more of a brownie girl, but it tastes more like a brownie to me–a fudgy brownie.   There are 3 reasons I would normally pass on this dessert at first site:

  1. I’m not a big fan of cake in general
  2. I don’t care for plain vanilla stuff
  3. There are no nuts or chips or chunks in this–boring!

So. Not. Boring.

Fudge Lover’s Strawberry Truffle Cake~The perfect Valentine’s Treat!

*This is a re-post from last year, but I wanted to share a yummy Valentine’s treat in case you missed it!*
Most of this is “on hand” ingredients. Devils food cake mix and 2 bags of semi sweet chips/baking chocolate are the only items you may not have. I have made this every year for Valentine’s Day for the past 5 years or so. Just YUM! I noticed it at the check out stand in a little Betty Crocker cookbook (full recipe at the end of this post). It’s really easy, you just have to plan ahead to let it cool and chill at 2 diff. stages.

First you bake the cake mix just like it says on the box and let it cool completely (ummm, made a big hole when I was testing the rediness).

Then you make the ganache with the whipping cream and semi sweet chocolate (you WILL sound extra fancy when you tell people you made ganache–say it ga-na-shh).
