Cream Cheese Chocolate Chip Cupcakes

I can’t believe I haven’t yet shared our families favorite Cream Cheese Chocolate Chip Cupcakes with all of you! They were introduced to me the night my husband proposed, and I’ve made them ever since. I generally have all the ingredients on hand (I do try to keep cream cheese in the fridge), so it’s easy. If you keep cream cheese and chocolate chips on hand (I generally do),  you will likely have all of the other ingredients in your pantry, too.

Peppermint Dream~Ice Cream Dessert

I had this yummy treat at a holiday party we attended, and was so excited to get the recipe!

{The above image looks extra dreamy because it was taken at 1:30 a.m. under the vent hood light in my kitchen. The things I do for you, friends.}

Start with crushed Nilla wafers mixed with butter as the crust…then drop the chocolate mixture…

Let that freeze…

Then drop spoonfuls of softened ice cream on top and spread.


Refreeze then sprinkle remaining Nilla wafers on top.

Actual recipe:

Peppermint Dream Ice Cream Dessert
1 11 oz. box of crushed vanilla waffers
1 stick of butter melted
2/3 cup butter
2 squares Baker’s Chocolate
2 cups powdered sugar
2 egg yolks
1 tsp. vanilla
1/2 gallon peppermint ice cream

First Layer
1 11 oz. box vanilla waffers crushed
1 stick of butter melted
Combine to make crust. Use half to put in the bottom of a 9×13 pan and chill.

Second Layer
Melt 2/3 cup butter with 2 squars of Baker’s sweet chocolate in a sauce pan or microwave bowl. Cool a bit and then add 2 egg yolks, 2 cups powdered sugar, and 1 tsp. vanilla. Stir until mixture gets creamy smooth and a bit lighter in color. Spread over crumb crust, then freeze.

Third Layer
Put softened peppermint ice cream on top of chocolate layer and smooth out any lumps. Sprinkle the rest of crumb to pping on top and freeze.


*I have also heard you can substitute this with crushed coconut macaroons with nuts and sherbert.
