Strawberry Cream Cake

One summer, about 7 years ago, I must have had this Strawberry Cream Cake about 10 times. Among my circle of friends, it was requested at every baby shower, book club, or girls night we had. There was a gal, Tiffany, who introduced it to the group, but it was my dear friend Linda who typed it out, and included it in the recipe book she gave me of her favorites when she moved away. I hadn’t made it for quite a while, and got excited to whip it up the other day when we had family in town.

Start with a jelly roll pan and a white cake mix.  If you don’t know what that type of pan isis, it’s big and thin. I like cakes better this way anyway.  The stuff on top is where it’s at, the cake is just the base. I added some cut up strawberries to the original recipe because I like texture in my cake.

Above is the cooked cake, the strawberries sunk down into the cake.

My girls were excited to help, and I had my oldest chop off the stem on the strawberries.  The youngest snatched a few…

I then decided to veer from the original recipe and make my own glaze. You can buy pre-made glaze at the grocery store (they sell the bright red stuff by the strawberries) but I am liking making my own treats lately, generally less sugar. This process reminded me of making strawberry freezer jam, but a lot less sugar. 

After cooking the strawberries for a few minutes, they softened and I mashed them down in the boiling water.

Speaking of less sugar, this cream cheese frosting has 2 cups of powdered sugar, so not so much sugar free or anything. But I LOVE a good cream cheese frosting…I pretty much only do cream cheese frosting on everything. This also has a little cool whip in it.  I topped with some of the fresh strawberries my girls cut up.

Here is the cream cake before the glaze…you can see the strawberry in the cake part make a little appearance, shyly. Then voila, ready to gobble up!


Strawberry Cream Cake


white cake mix

2 cream cheese

2 cups powdered sugar

1 pt. whipping cream (cool whip)

strawberry glaze, store bought or homemade (corn starch, lemon juice)

Lots of strawberries (I used 2 of the BIG strawberry cartons for glaze, topping, and inside)


1 package white cake mix cooked in jelly roll pan for 15 minutes at 350

(this is where I added some chopped up strawberries for a little extra texture in the cake)


2 8 ounce pkg. cream cheese

2 cups powdered sugar

stir in:

1 pt. whipping cream (cool whip)

Spread above over the cooked cake and refrigerate. I then put the strawberries on top and served each individual slice with the homemade glaze. But the cake I know uses the store bought glaze and mixes that with the strawberries and then  tops. My homemade glaze didn’t set as well and was a bit runnier.

  2. I’m practically drooling over this cake, thanks for sharing!! I absolutely LOVE strawberries in the summer. I love adding cut up/sliced strawberries to a lot of cold drinks this time of year–lemonades, snapple drinks, juices, adult drinks ;), etc. I also love to just munch on them plain and simple, sliced up!

      Oooo, lots of fun ideas! Strawberries and vanilla yogurt are my favorite simple snack. Lemonades, for sure!
