Cinnamon Chip Cake Batter Cookies

The other day was my friends birthday, and I wanted to bake her a little treat. I thought I had all the ingredients to the simple (and my favorite) Andes Mint Cookies, but I didn’t have the Devils cake mix. I love how easy it is to make them with a cake mix. I thought….I can do that with another mix and some type of chips. I had a yellow cake mix, looked in my chip selection (I actually have quite a few options) and the cinnamon chips jumped out at me….yellow cake flavor with cinnamon….YUM! Thus was born the Cinnamon Chip Cake Batter Cookies.

I’m sure I’m not the first person to think of this idea, but I discovered it for myself, and it was very exciting! I felt like a true baker experimenting with ingredients and it worked out! I’d be REALLY annoyed if it didn’t work out.  They were super chewy–just how I like my cookies!

I love looking at these pictures and seeing a few nicely shaped cookies and a few totally crazily shaped cookies–it’s just life around here. So here is the simple 4 ingredient recipe:

  9. This may sound stupid lol, but what are cinnamon chips and where do I find them?

    • Kristen Duke says:

Not stupid, I shouldn’t assume! They are like chocolate chips, just cinnamon flavored. They can be tricky to find, but I generally see them at Wal Mart.

  16. I’ve been obsessed with cinnamon. Last fall, I added the cinnamon chips to a Snickerdoodle Cake Mix cookie I found on Pinterest. Did basically what you did except I rolled them in cinnamon sugar before baking. My 3 yr old granddaughter loved helping me make them.
